Remove wedges from orange then slice the orange skin in to small long pieces. Squeeze another orange and strain the juice
Peale the bananas and slice it for few pieces.
Add sugar to the sauce pan with low heat, add sliced orange skin and pour a half of cup of orange juice to the sauce pan. Cook, stirring, until the sugar caramelizes, about 5 minutes under medium heat.
Add orange wedges to the sauce pan and mix with caramelized ingredients then add cinnamon powder and stir it up until the all ingredients well mixed.
Add butter and stir until it melt and mix well at low heat and return the skillet to medium heat, then add the bananas slices
And cook until glazed and golden, 1 to 2 minutes
Add the Brandy to the pan and return to medium heat. Warm for a few seconds without stirring, then carefully tilt the pan so the rum ignites (if using an electric stove, hold a lit match nears the sauce to ignite it).
Spoon the flaming sauce over the bananas.
Decor and Garnish with Vanilla Ice Cream and the strawberries, watermelon or any fruit that suits your event and taste.
All thanks goes to Chef Jagath Katugampola who came up with this brilliant idea of introducing a tasty recipe by going out of usual cooking demonstration for dessert recipes.
Our production crew enjoyed the dish very well and we didn’t miss having even a single drop of syrup that left on plate instead.
