CURRY powder
Curry powder is usually a mixture of turmeric, curry leaves, dill seeds, cinnamon sticks, cardamom, clove, rampe, lemon grass, chili powder, coriander seeds, cumin seeds, fennel seeds, ground ginger and pepper, and can be bought in mild, medium or hot strengths.
Thuna paha - untasted curry powder - is best with vegetable dishes.
Roasted Sinhalese curry powder - bathapu thuna paha - has more intense flavors than the unroasted version. This include with coriander seed, cumin seed, fennel seed, mustered seed, curry leaves, dill seeds, cinnamon sticks, cardamom, cloves, rampe lemon grass. Which means it can stand up to the flavors of meat dishes. It's often sprinkled at the end of cooking to add a fragrant finish.
